I got this recipe from a friend and it is so YUMMY! Hubby cannot eat regualr red pasta sauce anymore so this is a perfect recipe to make when the boys want Spaghetti: Spaghetti for them, and Buffalo Chicken Pasta for my hubby and I!
Buffalo Chicken Pasta
* 1 pound penne* 1 tsp. paprika* 1/2 tsp. salt* 1/2 tsp. garlic powder* 1/2 tsp. black pepper* 1 pound boneless, skinless chicken breasts, cut into 1/2-inch pieces* 2 tsp. vegetable oil* 1-2 tsp. hot sauce* 1/2 cup sliced celery* 1 cup chopped onion* 1 cup mayonnaise* 1/2 cup bleu cheese salad dressing* 3/4 cup milk* 2 Tbsp. bleu cheese, crumbled
—Prepare pasta according to package directions.—While pasta is cooking, combine paprika, salt, garlic powder and pepper; sprinkle over chicken, stirring to coat.—Add oil to a large skillet and heat over medium-high heat. Add chicken to skillet and saute over medium-high heat, stirring frequently, until chicken is golden brown and cooked through. Add hot sauce; cook 1 minute. Add celery and onion and saute about 2 minutes; turn heat down to med-low.—Combine mayonnaise, dressing and milk in a small bowl. Add to skillet and stir until thoroughly heated. —When pasta is done, drain well and return to pot. Add contents of skillet to pot and mix well (or add pasta to skillet, either way) and let sit a couple minutes to meld. Transfer to serving dish and sprinkle with cheese.

Working Momma again!
Back to the grind! After a year and a half off, I am back to work. This time I am a headstart teacher. I have survived one week so far and am enjoying it. Although the pay is a lot LESS than a teacher in public schools, I only teach an AM class and have the rest of the day to plan, do computer work, and work on assessment, observations, ect. So it looks like it will be a little more my speed and less stress. Now the juggling game will begin onf home and work. Thank goodness the hubby works short hours here so he can help out a TON!
Wish me luck and keep me in your thought and prayers...I work with 20...yes 20....3,4,and 5 year olds!!!

Veggie/Fruit Quest #3
Well kinda sneaked in a new veggie at Thankisgiving....Sweet Potatoes.
I made sweet potato casserole....mmmmmm! Hubby and I both enjoyed it!
Both my 3 and 7 year old ate some so I THINK they like it. Someday I am gonna attempt to make sweet potato french fries for another attempt.
Next on our quest will be ..brussel sprouts! I have never had them, but found a bag of them that you just steam in the bag. Gonna be interesting...lol!!!

Veggie/Fruit Quest #2

KIWI
This week my 3 year old picked out the fruit.
I gave them each a piece (and put the rest in a fruit salad)
Me: Very yummy and juicy
The 3 year old: He ate 2 pieces, but was picky a bit abot the tiny seeds
The 7 year old: He liked it too...wanted more:)
The verdict: definately will buy and eat again

A little background info: I am not big on veggies and fruits; therefore, neither is my family. We eat the basic fruits and vegetables, and not enough of them. One day I came up with an idea that each week we should try a new vegetable or fruit. So here begins our quest....

I bought it fresh and steamed it. I served it with butter.
Hubby: liked it, ate it before, told oldest son it gives you gas
Me: It was ok...nothing great
The 3 year old: wouldn't attempt to try it
The 7 year old: liked it (especially after his dad said it would give him gas)
The verdict: I can definately make it again!!!
